My wife also masturbates in her sleep, and has for about two years. Until our trust shone through, and she finally realized I wasn't making this up, it nearly ruined our marriage. So I understand completely why it could be so disturbing.
She would deny my advances for a week strait, and wake me up masturbating that whole week long. It got to the point where I actually wondered if she was trying to drive me insane, or drive me to divorce her. She thought I had snapped, and was so obsessed with sex that I actually halucinated that she was masturbating, like a complete psychotic break.
It can be incredibly taxing.
She did not get up, open her eyes, or leave the bed ever, but would sometimes be using both hands so intensely that the bed would shake enough to wake me. I could talk to her with no response, touch her shoulder, nothing woke her up. If I indeed shook her awake, which I eventually did when she challenged me to, and she realized where both her hands were and that I could not have staged this without waking her, she finally knew I was telling the truth, and I finally knew she wasn't pretnding to be asleep or proceeding from some kind of sadistic torture thing!
Frankly once she found it to be true it significantly decreased...but still happens. I sometimes watch her, or join her, or most times simply roll over happy in the thought that even if in her conscious life she can't masturbate enough for her bodies liking, that she is getting hers

There are sleep disorder specialists you can see, even clinics for sleep disorders, if you really want this stopped. I suggest first clearing the air with hubby, perhaps ask him to videotape it, not because you don't believe him, but because you are shoked with yourself (if you are). This would be wise as it may be that he is dreaming that you are masturbating, another posibility.
But please know you are not alone!
